Izakaya 居酒屋

A Japanese pub or casual eatery. Think tapas bar meets neighborhood restaurant. Lots of small plates, drinks, and a relaxed vibe.

Chashu チャーシュー

Braised and sliced pork belly or shoulder, slow-cooked until meltingly tender. The standard ramen topping.

Donburi (Don) 

A rice bowl topped with meat, fish, or vegetables. A complete meal in one bowl. "Don" is the abbreviation you'll see in dish names.

Katsu カツ

A panko-breaded, deep-fried cutlet (usually pork or chicken). Crispy, golden, and served with a tangy brown sauce.

Ikura いくら

Salmon roe (fish eggs). Jewel-like orange pearls that burst with briny, oceanic flavor.

Kamameshi 釜飯

Rice cooked to order in a small iron pot with dashi and seasonal ingredients. Takes 30 minutes but delivers incredible depth of flavor.

Tonkotsu 豚骨

Pork bone broth, simmered for hours until creamy and opaque. The base for our richest ramen bowls.

Dashi 出汁

The fundamental Japanese stock made from kelp and bonito (dried fish flakes). Adds savory depth (umami) to soups, sauces, and rice dishes.

Omakase おまかせ

"I'll leave it to you." The chef selects the best items available that day. Trust the kitchen.

Ponzu ポン酢

A citrus-soy dipping sauce. Bright, tangy, and refreshing. Commonly served with grilled fish.

Mentaiko 明太子

Spicy marinated cod roe. Salty, slightly spicy, intensely flavorful. A popular add-on.
